15-Minute Meals: Quesadilla Madness!

I love the ease and flexibility of quesadillas. You can put out a few ingredients and let kids choose their own fillings. In 10-15 minutes, you have a delicious dinner. Here are a few versions to inspire you, but feel free to run with variations yourself!

Serve them with a side of beans and rice or an easy green salad to round it out. This oven-baking method ensures very even cooking, but if you’d like to speed these up even more you can certainly do these in a pan.

Ingredients

  • 8-12 8-inch flour or corn tortillas
  • olive oil
  • 2-3 cups shredded Monterey Jack or mozzarella cheese
  • For a Mexican Option: prepared salsa, guacamole, and sour cream
  • For an Italian Option: packaged pesto and sliced prosciutto or salami 
  • For an Adventurous Option: Blue Cheese, Pears, and fresh Rosemary

Preparation

Position a rack in the middle of the oven and preheat the oven to 450˚F.
 
Using a pastry brush, lightly brush one side of each tortilla with the olive oil. Place half the tortillas, oiled side down, on a cookie sheet. 

Evenly sprinkle the jack cheese over the tortilla.  Spoon small amounts of the salsa over the cheese. Place the other tortillas, oiled side up, on top of the filling.

Put the cookie sheet in the oven and bake until the top tortilla is lightly browned and crisp-looking, 8 to 10 minutes. Let the quesadilla cool for a couple of minutes before sliding it to a cutting board. Using a pizza cutter or sharp knife, slice them into 6-8 wedges. Serve with the guacamole and sour cream for dipping.
 
For the Italian Option, sprinkle the tortilla with cheese, then layer a few pieces of prosciutto or salami on top. Spread a tablespoon of the prepared pesto on the inside of the other tortilla before placing it on top. Bake as directed above.

For the Adventurous Option, sprinkle the Jack cheese over one side, then top with some blue cheese crumbles, thinly sliced pear, and a tablespoon of rosemary leaves. Place the other tortilla on top, oiled-side up, and continue as directed.
