3-Ingredient Strawberry Compote
Whenever I can smell strawberries at the market, I snatch 'em up. I recently got my hands on three pints of super ripe, organic strawberries for $5 - a total steal! So what’s a girl to do? I made this quick and easy strawberry compote to put over our pancakes in the morning.
Serves 8-10
Ingredients
3 cups very ripe diced strawberries
2 tbsp lemon juice, freshly squeezed
2-3 tbsp sugar
Preparation
Place the strawberries, lemon juice, and 2 tbsp. of the sugar in a medium sauce pan over medium heat. Use a potato masher to smash them a bit and release some of their juices. Bring them to a simmer, then cook for 5 minutes, stirring occasionally. Taste, adding a little more sugar if necessary. Pour into a bowl and allow to cool before using.
