5 Ingredient Coconut Rice
This is a simple and fun twist on rice! It's the perfect compliment to any Asian-inspired dish or delicious alongside any grilled meat or fish, and kids love its mild sweetness.
Serves 6
Ingredients
2 tbsp peanut or vegetable oil
2 cups long grain white rice
kosher salt and freshly ground pepper
4 cups coconut milk, unsweetened
1/2 cup green onions (scallions), sliced
Preparation
In a medium saucepan, heat the oil over medium-high heat. Add the rice and cook, stirring, until the rice becomes translucent, about 2 minutes. Season with a pinch of salt and pepper and stir in the coconut milk.
