I always loved pigs in a blanket as a kid, and these are a really quick way to achieve similar results that are fun for Halloween. For a really spooky presentation you can go all out and squeeze a little mustard or ketchup on one end of the sausages to look like a nail. For a treat other times of year, skip the gory presentation and simply offer ketchup or mustard for dipping on the side.
Serves 4-6 as a Halloween snack
24 miniature chicken apple sausages (pre-cooked kind like Bruce Aidells’ Mini Chicken Apple Sausages)
4 6” flour tortillas
Ketchup and/or mustard
Preheat the oven to 350 degrees F. Cut a small indentation out of each sausage to look like a nail bed. Stack the tortillas, then place them between two damp paper towels and microwave for 20-30 seconds. This will soften them. Cut the tortillas into strips that are 5” long by ¾” wide.
Wrap the end of each “finger” with a tortilla, then skewer each mini sausage with a toothpick horizontally. Place all 24 of them on a baking sheet. Bake until the tortillas are a little golden and the sausages are warmed through, about 8-10 minutes.
Squeeze a little ketchup or mustard into each nail bed. Remove the toothpicks and place them on a serving platter.
