I love this pulled pork recipe. The meat gets all crispy on the outside, but pulls apart perfectly for a sandwich. Dripping in BBQ sauce, it doesn’t get any better. If you’d prefer to put this in your slow cooker, try it on the low setting for 8 hours. Just add a splash of stock or water in with the pork. It won’t get crusty on the outside, but it will still pull apart beautifully.
4-5 lb boneless pork shoulder roast, trimmed and tied
For the Rub:
2 tsp ancho chile powder
1 tsp ground cumin
1/2 tsp granulated garlic
1/2 tsp dry mustard
kosher salt and freshly ground pepper
Pat the roast dry with paper towels.
To make the rub, in a small bowl, stir together the ancho chile powder, cumin, granulated garlic, mustard, 1 tablespoon salt, and ¼ teaspoon pepper. Sprinkle the rub mixture evenly over the entire roast. Make sure to rub the mixture into all of the creases as well. Transfer the roast to a plate, cover with plastic wrap, and refrigerate overnight.
Remove the roast from the refrigerator about 1 hour before roasting. Preheat the oven to 350˚F. Oil a flat roasting rack and place it in a roasting pan just large enough to hold the roast. Place the pork on the rack. Roast the pork until a thermometer inserted into the center of the meat registers 190˚F, about 4 hours. Remove the pan from the oven, transfer the pork to a warmed platter, and tent with aluminum foil. Let rest for 20 minutes.
Remove the strings from the pork. Chop or “pull” the meat into shreds using 2 forks or your fingers, discarding any large pieces of fat. Arrange the meat on individual plates with a little BBQ sauce spooned over the top, or serve them on sandwich buns with the sauce on top. Serve at once.
