Homemade Lactose-Free Buttermilk & Sweetened Condensed Milk

As the holidays get closer, so do the days filled with cooking and baking.

Two staples that I almost always need while I’m baking are buttermilk and sweetened condensed milk.

Buttermilk has a fantastic, creamy texture and a tang that adds a nice punch of flavor to any baked good (especially cakes and breads).  Sweetened condensed milk is a sweet and velvety-smooth product that provides a nice base for bars, fudge, and a variety of other desserts.

I’ve never seen any commercially made lactose-free buttermilk or sweetened condensed milk, but that’s okay! You can easily make your own at home for your holiday baking this season.

Making buttermilk is simple and literally takes five minutes.

Homemade Lactose-Free Buttermilk

Makes: 1 cup

Ingredients

  • 1 cup lactose-free milk
  • 1 tbsp lemon juice or white vinegar

Preparation

  1. Stir the milk and lemon juice/vinegar together in a medium bowl.
  2. Let the mixture sit for five minutes until the milk looks like it has curdled.
  3. Use as needed in the recipe.

Easy, right?

Homemade sweetened condensed milk takes a little more time, but it’s still a very simple recipe, and for your recipes, it’s worth it.

Homemade Lactose-Free Sweetened Condensed Milk

Makes: 2/3 – 1 cup (adjust the ingredient amounts depending on how much your recipe calls for)

Ingredients

  • 1½ cups whole lactose-free milk
  • 2/3 cup sugar
  • 3 tbsp butter
  • 1 tsp vanilla
  • Pinch of salt

Preparation

  1. In a heavy-bottomed saucepan, stir the milk and sugar together. Bring the mixture to a low simmer, stirring often.
  2. When you can see steam coming up from the milk mixture, lower the heat a little further, and once the sugar is dissolved, keep the milk at a very low heat. You want to reduce the milk and sugar to about half. Reducing the mixture will take anywhere from 1-2 hours, depending on how low you have your burner and how thick you want your condensed milk.
  3. Once the mixture is reduced and thickened, stir in the butter and vanilla until combined. You can use it warm (depending on the recipe) or you may need to let it cool before adding to the rest of your ingredients.
