Recipe: Crispy Baked Chicken Fingers

What child doesn't LOVE chicken fingers? This recipe captures everything there is to love about the ever-popular kids meal, with a crispy, crunchy, flavorful exterior and tender white meat interior. Served with this delicious honey-mustard dipping sauce, your kids won’t miss the drive-through variety.

Serves 4

Ingredients

1-1 1/2 lbs chicken tenders or chicken breasts cut into strips
1 cup buttermilk
1 1/2 cups Italian-seasoned dry bread crumbs
3 tbsp olive oil
kosher salt and freshly ground pepper

For the Dipping Sauce:

1 cup sour cream
2 tbsp Dijon mustard
2 tbsp honey
kosher salt and freshly ground pepper

Preparation

Preheat oven to 375˚.
 
Soak chicken in buttermilk for 20 minutes or if using frozen chicken, place the chicken in the buttermilk while it thaws in the refrigerator.  In a bowl, combine breadcrumbs, ½ tsp salt, and a fresh grinding of pepper.  Pour olive oil into breadcrumbs and, using a fork, mash to coat the breadcrumbs in the oil.
 
Remove chicken tenders from buttermilk, allowing excess milk to drip off, then press chicken into the breadcrumbs.  Place chicken tenders onto a baking sheet and bake in the oven for 6 minutes.  Remove the tray, flip the chicken tenders and continue to bake until chicken is done - about 6-8 minutes more.
 
For the dipping sauce, mix all ingredients together and season with salt and pepper to taste.
 
Serve with mashed potatoes and your favorite green vegetable.  The dipping sauce tastes great mixed into the potatoes, too!
